

Ingredients
- 10 large king prawns
- Salt, pepper
- 2 tbsp of flour
- 2 eggs
- 1 glass of Panko bread crumbs
- Oil for frying
- Lemon (when serving)
- Fresh parsley (for decoration)
Sauce
- 4 tbsp Daumantų Karališkas mayonnaise, original taste
- 2 tbsp of Greek yoghurt
- 2 cloves of garlic
- Salt, pepper
- Splash of lemon juice
Method
Crispy fried prawn is one of my favourite snacks. It’s my guilty pleasure that I occasionally indulge in! Feel free to make if for Christmas or the New Year – this snack is a party favourite.
By the way, you can also use this method for making fried squid rings, onion rings, vegetable sticks and chicken pieces. Or include all of the above to prepare a wide range of appetizers. Which is great if you are expecting many guests and have to make a lot of food. And, of course, it’s much cheaper than just making prawns.
The garlic-mayonnaise sauce is just as important in this recipe as prawns, since it goes very well with any fried snack. I get the question about mayonnaise a lot. To be honest, there is always some mayonnaise in my fridge. I consume it in moderation, but it is truly irreplaceable in certain sauces and dishes. As in this case, the two most important things for me when choosing a mayonnaise is the origin of the eggs (I prefer free-range chicken eggs) and the quantity of unnecessary additives (the less, the better). The new Daumantai mayonnaise line Karališkas is made with free-range chicken eggs, contains natural lemon juice and is preservatives- and starch-free.
1. First, you’ll have to prepare the prawns – peel, clean and straighten them.
2. Then sprinkle the prawns with salt and pepper.
3. Now take three bowls. Pour the flour into the first one, crack the eggs into the second one (and whisk them), and pour Panko bread crumbs into the third one.
4. Roll every prawn in flour, eggs and Panko bread crumbs.
5. Heat the oil in a frying pan or a pot. There should be enough to fully cover the prawns. Be sure to use the oil that is suitable for frying at high temperatures.
6. Put the prawns (a few at a time) into the hot oil and fry for about 2 minutes.
7. Place the fried prawns on a piece of paper towel to soak up the excess oil.
8. The sauce: mix together the mayonnaise, yoghurt, garlic, salt and pepper, and add some lemon juice. Stir.
9. Serve the prawns with the sauce and lemon quarters, and sprinkled with parsley.
